Landscapes
For those times you want to show the details from the highlights as well as the shadows try HDR.

Man Made
When you want the details of the rust or paint to life on your cars or man made objects to shine, or the details of the bricks in the shadows and highlights on the buildings to pop try HDR.

Panoramic
Shooting HDR and combining these into panoramic photos is no different then when shooting HDR landscapes. After processing each HDR just combine them into your panoramic scene. The major difference is at times you must move fast and the total number of photos used to create the final image is can be huge.

Sunsets
Sunsets can be the hardest photos to take when you want to capture all the highlights and shadows.

Water

Water can be hard to capture in HDR due to its constant movement. Many times I have made a psuedo HDR. This is where you take one raw image and split it into several different exposures and then re-combine these into a single HDR.

Winter
Winter can be some of the hardest photos to capture all the details. The snow has some incredible highlights while the same time the shadows can appear darker then they are to the sensor.
